Noodles Bolognese

  • 4 eggs
  • 400 grammes of flour
  • salt, quantity as required

Procedure

Place the flour on the cutting board, make a hole in the middle and put the eggs and salt, mix everything by hand. When the mixture is very hard and compact, pull the dough with a rolling pin. It must become thin puff dough. If the dough is well patted, tagliatelle are compact and long: this is the secret of well-made tagliatelle. You should let it dry and then cut. Boil them in plenty of hot water and salt. Condiment may be: meat sauce or butter and parmesan.
